She is not a tsundere. The tsunderes in type moon are Rin and Akiha. I can't remember any other right now, but there probably is. Not every character is classified as something. Anyways Shiki's too good for that. Some people would refer to her as Kuudere but she is definitely not.
Well you are right about night in a way, because only 1 route is dark in FSN.
IMO from darkest to least darkest would be Zero > KNK > Tsukihime> Night
