Most series with an overarching narrative, tempo and structure really gain by being viewed all at once. Slower episodes that would have seemed boring now appear as character /world, and dramatic peaks benefit much from the immediate buildup. Most of all it allows the show to really pull you in inside its world and the story it's trying to tell, where an episode a week can really kill the immersion.

Series that are episodic in nature (like comedy, ecchi, detective, etc) on the other hand usually only have one or two gimmicks at most, and that can be really repetitive if you watch all at once. An episode a week keeps them fresher.
