I read in some article that Shepard gets to customize the suit of N7 armor throughout the game. Everything from appearance, to camouflage coloring, to the effects it gives.

It wasn't a war between the Alliance and the Citadel, it was between the Alliance and the Turians only. The Citadel stepped in to intervene and stop the war.

That would be the First Contact War. The Citadel stepped in before the Taurians could bring their full strength to bear after they lost their occupation fleet.
