Sayaka is using a "lower-level" Jin'i that allows a maintained increase in mobility without tiring her out. If it was a battle of attrition, Hiyori would have been defeated because she would use higher-level Jin'i that's more taxing to the body than Sayaka's.

And yea, this doesn't change the fact that Kanami, who defeats enemies by barehanded blade steals, is OP.
