It wasn't the mystery that was important. But the victim. For Ryouko it doesn't matter if she be caught after. She wanted to see Haruhi's reaction to Kyon's death. Otherwise, she could just have killed anyone else.
I don't know if she being faster then she should be would be any difference, though. She probably had enough control over her body to stop stabing he just at the point it is physically possible.
