The show is kind of vague on how much Mayuri remembers.

From one episode, she tells her grandmother that she only has hazy memories of what's happened to her in past timelines, much like Kurisu has; but some of her comments seem to imply that she has clearer memories than even she knows. Then again, it could just be that Mayuri was able to piece it all together and get at least a decent idea of what was happening.
