Well I'm not sure if you got there yet but bloodbending is technically there, but only under a full moon. I do realize that there is water not only in blood but also organs and such, but the series acts as though the human body is a barrier that chi/chakra can pass through, unless you want it. It is known that in Avatar world, chi/chakra can be blocked (note: Ty Lee's abilities) by hitting certain points in the body, stopping its flow. Therefore, the human body could be a viable defense against this intrusion. But of course, when there is a full moon, supposedly a water bender can get past that barrier.
Of course what I said is solely based on inferred information and opinions.
