Well, I agree with you on some points. Still think "Fate/" series is great, but of course there are hole in it. Don't know much about Ever17, though.
Maybe you should try Age's product like Muv-Luv (Guarantee the awesome) and Kimi ga Nozomu Eien (A wonderful love story).
