Also, how many 1-on-1 fights has she had? I know about the little fight she had with Aqua, and the one she had against Beyloupe. Other than those, I've got no idea if she's had any other mano-a-mano.

After Itsuwa tried to heal Touma, Aqua attacked Itsuwa. Touma stood up and thanked Itsuwa for her healing. Touma was knocked out for good by Aqua. Aqua told them that he'll come back a day later to fetch Touma's arm, then threw Touma's body a few hundred meters away into a river.
Touma was then sent to the hospital. Itsuwa became emotionally unstable, and the rest of the Amakusa were left feeling down powerless. Tatemiya encouraged and cheered them up, then they prepared for the battle.
The Amakusa encountered Aqua as a group, with Itsuwa as the main attacker. Together, they eventually created a chance to pull off the "Saint Destroyer" move with the spear. However, Aqua successfully guarded against it and it didn't do any damage.
Then came Kanzaki. Of course, she wasn't able to defeat Aqua alone. After some fighting, she realized that she should rely on the Amakusa, instead of always treating them as a target for protecting. Then she called out and asked for their support. Again, as a group, the Amakua with Kanzaki fought Aqua and created a chance to use the "Saint Destroyer". However, Aqua was also preparing an attack which would hit Itsuwa before the "Saint Destroyer" hits. At this point, Touma (who sneaked out of the hospital), came and negated Aqua's magical attack. Kanzaki, as a Saint, was able to restrain Aqua's movements right at the moment, making Aqua unable to guard against the spear attack. Itsuwa then executed the Saint Destroyer and won the battle.
