Kuroshitsuji - beautiful gothic style action/drama/mystery/fantasy. It's really great.
Hellsing - stylish, gory vampire awesomeness.
Shin Angyo Onshi - very well-written and well-drawn historical Korean manhwa, wit a lot of cool action scenes.
Monster - densely plotted psychological drama/thriller.
Soul Eater - standard Shounen stuff, but interesting art and characters.
Fullmetal Alchemist (you must have read this, though. this is just in case.)
