I'm with Moe Connection here. Not to mention that well, even if Stalker does copy Souma and start psychologiccal warfare - which I think was another big factor in his win - I don't think it would affect Souma. It would be hilarious for the guy to start spewing some long BS only for Souma to say "Wut? Wut are you talking about?".

If Subaru analyze each and every of his opponent's personality thoroughly like he said, I bet he use different strategies for each opponent. He use heavy psychological attack on Takumi and many other because they're mentally weak, so that kind of attack is effective. But with someone who is so carefree and doesn't look like he has any mental weakness, I wonder what strategy Subaru will use against Souma? (suppose he won't loose against someone else first).

I wonder who Souma will face next. Personally I would want to see Souma battling out with Akira who is probably closest to Erina in terms of potential and Kurokiba who is a better cook than Alice.

No it is more basic than that. The big bad is Eizen. He sends someone to take care of Souma. So that one has to be established as a threat. This is basic storytelling and wouldn’t work any other way.
If Takumi would have won there would be absolutely no upside. Takumi wouldn’t be considered more of a threat just because he won and Eizan would become a lot less credible as a threat.
