Well, it ended with Sayaka remembering about them being couple before her amnesia and it's implied they will rekindle their relationship in some form. I would .say, it's around as implicit as Keima x Chihiro

I don't assume there will be third season to make Tsutomu x Birdy happen (which could be unironically nice imho.) anyway.

Yep, but the epilogue has her dying in Camelot accepting the fate of her kingdom while returning Excalibur. I think she actually dies in the three routes with the exception of the Unlimited Blade Works OVA.

Then again, Type-Moon later made a Realta Nua remake where Shirou reunites with her in the island Avalon. However, that feels more like the afterlife of heroes.

At least that is the author's attempt to put resolution on romance after the open ending

You know, I can't remember if I had already read that omake...still not 100% conclusive, but seems to give a hint for a winner. And she even was my ship!

Isn't end result matter the most?

Obviously that is what hinted from the last omake to resolve from thief girl > stalker girl > idol (final)

Also the MC really enjoyed their time together during the concert date chapter
