Which animes would you guys say had the best music? It can be theme (OP and ED), background, or anything related that wasn't in the show.

I'd put Dennou Coil, with score by Saito Tsuneyoshi, at the top of my list. He employs an extraordinary variety of instruments and orchestration that captures the mixture of childhood wonder and dark mystery that the story entails.

it all depends on what you're looking for. Is it more vocal, electric,orchestra,more mysterious and magic vibes, guitar and rock like, calm and fun themes

there's so many and there's so many in each category, I would check out artists:
** Yoko Kanno (Ghost in the shell, Wolf's Rain, Darker than Black etc.)
** Yuki Kajiura (Mai HiME, Pandora Hearts, Tsubasa Chronicle etc.)
** Joe Hisaishi (Princess Mononoke, Spirited Away etc.)
** Kenji Kawai (Eden of East, Ghost in the shell movies etc.)
** Taku Iwasaki (Kekkaishi, Soul eater, Black Cat etc.)
** Naoki Sato (Eureka 7, X/1999 TV etc.)
** Michiru Oshima (Fullmetal Alchemist older one, Xam'd Lost memories)

All mentioned series have worthy soundtracks to check out =)
Others could include Key Sounds Label for soundtracks as: Air, Kanon, Clannad etc.
And the Evangelion soundtracks

I'm a big fan of the relatively unknown Oh! Edo Rocket. Great OP and ED, and a couple of hilarious soundtrack numbers.

Two soundtracks, that I listen to way after I saw the shows:

Naruto I
Noir

Not in any way objective or representative. Just found the ST of both shows "hearable" in many situations.

Lotta OP/ED I like to hear way after the shows.

From what I have seen so far:

Air TV/Air Movie/Air in Summer- Tori no Uta - Also the OP for the Air visual novel and is one of the best songs Lia have sung... but there are others you know like Light colors, another song that Lia sung for Tomoyo after, which currently have no anime adaptation

Kanon (2006) - Last regrets - although it may be slow at first, but the song sounds very good and 90ish.

Clannad and Clannad After Story - Megumeru ~cuckool mix 2007~ , Dango Daikazoku, Toki wo Kizamu Uta, Torch, etc... - Clannad and Clannad After Story have some of the best songs and BGMs that sound so far and the Dango song can become addicting after awhile.

Kannagi - motto hade ni ne! - This song is addicting and good sounding and Haruka Tomatsu actually sounds pretty good, since she only had a few years of experience.

If you want anime with awesome soundtrack (and OP/END too), you must watch NOIR, Madlax .Hack//Sign. Yuki Kajiura did the music of these anime.

My best soundtrack ever is .Hack//Sign, try 1 episodes of each serie, you will not be disappointed in my opinion (in term of soundtrack ofc

)...

What no one likes the death note soundtrack,Lights theme,L's theme,Kodoku,all awesome songs from DN
There are also songs from beck which is a music anime(beware though theres engrish}
Theres also the Black Heaven soundtrack(another music anime}"Let me go,Let you go" is the best
FLCL and Gurren Lagann are awesome too
