See, I don't think it was all about the homework itself, I think Kyon could have suggest anything that wasn't already on the list, for them all to do together, and it would have broken the loop. I think Haruhi just wanted to spend that last day with her friends doing anything.

And, on top of that, perhaps she had a subconscious need for validation . . . that this band of slackers she drags around by the nose stick with her because they like her, and not just because she's dragging them around by the nose. So, deep down, she's thinking "Okay, if they/Kyon like/likes me, surely he/they'll suggest doing something together with me tomorrow. Right? Right? . . . aww fuck, they're just sitting there. WELL SCREW THEM! LET'S SEE HOW THEY LIKE IT WHEN I HIT THE RESET BUTTON!!!111"
That, or there's possibly something of an "Anything for my beloved" thing going on, since she knows Kyon's a big fat slacker, and she's giving him a chance to finish what he needs to finish for the summer. All of this is subconscious, of course,
