BTW - tried out making okonomiyaki the other day ... on paper it looks rather suspicious (mayonnaise topping to pancakes?) but when actually cooked it was surprisingly delicious!

Agreed. You can use it for pretty much everything else-veges, eggs, prawns, even tofu if you like.

I've seen this in animes: Rice omelette. Does anybody know how to make a basic/typical one? I'd like to try it.

Could someone post how to make one?

Ah, rice omelette! I haven't made that in a while. The egg wrapping the rice part must be done properly. Maybe I should make it again, it's been so long!

Actually before Paranoid Android posted, a bot posted a link to some untrusted website so i reported it to the mods. By the time Paranoid Android posted, the mods have already removed that post.

I found a good video for a traditional rice omelet (thanks to the person who posted a video to one, too, btw).

Same guy shows how to make gyoza. At the end of the video, he shows you how to make deep fried dessert gyoza (with fruit filling).

I used to have no real cooking skills at one point. I just started cooking more and more and I've gotten significantly better. If you want to get better at cooking, start making more meals and just start with things that are easy to do. Inform yourself on good cooking tips and techniques via information found in cookbooks or cooking and recipe sites.

You'll find that building up your cooking skills can be very rewarding.

I built up my cooking skills via trial and error. I can't stand recipes. They're so memory work and don't really help when you want to improvise something new.

I'm personally against learning to cook via recipes.

You're not supposed to learn how to cook using recipes. That's probably why people give up on cooking. Recipes are applying cooking methods in specific ways, and they assume a certain amount of knowledge, and often used specialized terms. You need to learn cooking methods first before you can feel confident with recipes. Either look online or get a book which that does this, for example Joy of Cooking.

Following recipes can yield great results, but of course, you don't have to follow all recipes exactly as they instruct you. Most recipes I follow I end up changing at least a couple things around and improvising with them.

Recipes are great for cooking. You just have to do your own thing with them when you feel that is the best thing to do. Give yourself that flexibility. Recipes can be guidelines if you just want that from them. Often times it is best to follow technical instructions (such as how to cook things and/or how long to cook things), but for things like the ingredients to use, for an example, it is totally a good idea to be flexible with those things and have the ingredients to your liking.

Also, following a recipe in tandem with improvising is not only normal, it is how so many variations to a dish and new recipes are born.
