Between this and Frieren I wasn't sure who would get season announced first (though Frieren would probably be harder to put together and this might've been planned from the get-go) but happy to be getting more Maomao and Jinshi !

Well, the amount of plot available in the source for the two series is quite apart.

"The Apothecary Diaries" covered 2 Light Novel Volumes (aka., Vol.1 & 2) worth of plot in 24 Episodes, and currently the Series has 15 Light Novel Volumes released so far.
For the Manga, it covered until Chapter 40 of the Nekokurage version (currently it's at Chapter 71, covering LN Vol.4 mid-plot), and until Chapter 30 of the Minoji Kurata version (currently it's at Chapter 77, covering LN Vol.4 end-plot). Both Manga are released on a Monthly-basis (yeah, this series has two Manga adaptation covering the same story, but in a bit different format published by two different publishers).

On the other-hand, "Frieren" had covered until Chapter 60 of the Manga (it doesn't have a LN source), covered over 28 Episodes, and currently the Manga is at Chapter 127.
I am not sure about it's release schedule, but it seems to be a Bi-Weekly Series (aka., one chapter per two weeks).

But even with the Bi-Weekly release, with the current plot available, they can probably only make about 2 Cours, which they can either release as a single Season (like Season 1) or two separate Seasons.

Small correction. Apothecary Diaries LN vol. 15 comes out in 3 days. But yeah, they have enough material for 6-7 more seeasons with the same pace.

Frieren is weekly, but there are frequent breaks. Currently on a one month break.

I know that, but it's only 3 days till release, and i posted it while keeping in mind that people after 3 days would read it as well, so didn't go for that minor correction.
