Right now Goku is the second strongest mortal in all the universe, right behind that Jiren guy, right? But I'm hoping he'll be able to beat him eventually. He'll have to transcend Super Saiyan Blue, though, probably (or use the highest possible Kaioken multiplier he can handle and keep training to push up his limit on Kaioken so he can handle higher and higher multipliers).

One worrisome thing here, though, is that in the anime, Vegeta noted that he and Goku have nearly reached the limit of how strong they can get and that any more improvements they get through training from now on will be slow and small. It was when Goku insisted on spending 3 years inside the Room of Spirit and Time before the tournament against Universe 6. They still did the training and Vegeta also said in the middle of it that he's already noticed them getting stronger. But if their reaching their limit on how strong they can get already, then they may have to surpass their limits. Goku's probably already doing that.

Not quite true since we have not seen the mortals from the universes that didnt participate in the tournament of power.

And considering how Goku's Ultra Instinct works, I'm sure the power levels are only to get higher and higher after the tournament.

Well, even if there are people who didn't participate in the tournament of power, the strongest guy in the tournament was still as strong as a God of Destruction. There can't be many mortals stronger than that, if any at all. And besides, I'm pretty sure there's no mortal in the 7th universe stronger than Goku.

What do you mean by Goku's "Ultra Instinct," though?

Goku new power up... He got that form temporary and managed to fight Jiren evenly... Though he runs out of it and got his ass kicked by Jiren, again...

Also Jiren stronger than GoD...

Time limit? Of course, he only use that form only like few minutes...

It'd be a situation similar to Super Saiyan God, if it's temporary but he can go into again if he wants. He doesn't need to transform into a Super Saiyan God again because he has Super Saiyan Blue, but he might need to in some situations. If he can still transform into that, then the situation with it is similar to the new form.

Jiren still haven't use full power and he is already beating Ultra Instinct Goku.

Goku is probably will close the gap thru Zenkai since he was royally beaten at here.

Saiyan has the power to gain massive power up when they are recovered from their previous injury or wound.

That is why Goku's power level jumped from 90k to 3 millions after he recovered his wounds at Planet Namek.

They also said that they have reached their limit in Cell arc too but it turned out to be false since they are now a god level.

In the anime Vegeta was angry that Hit can get stronger thru adapting because he thought only Saiyan race can grow stronger in the battle.

Also except Zenkai I really don't see how Goku is going to close his gap between Jiren in such a short time.

Well, in Super (anime) as well, they said that Goku and Vegeta were close to their limit and that they wouldn't get much of an improvement very fast through training anymore. But they did get stronger by training in the Room of Spirit and Time in that same episode, so I guess it really was a red-herring.

But yeah, right now, Zenkai is the only thing that can help him.

It's too bad Goku and Vegeta can't their tails back. Goku never became able to control himself in Great Ape mode, but Vegeta was able to do it, so maybe he could've helped Goku with that if they got the chance. And after being able to control himself in the Great Ape form, if Goku can also turn into a kind of Super Great Ape (Great Ape + Super Saiyan/2/3/Blue), it'd be good. That plus the Kaio-ken and Zenkai would make him really powerful.

Well, Super Saiyan Blue's peak power can only be maintained for a short period before gradually decreasing from stamina drain and because of it, the user to be unable to pull out even 10% of the form's full power...to maintain it's form, they have to Nerfed it so they can repeat the transformations...
But, in manga version, Goku and Vegeta managed to complete it... They gain Super Saiyan Blue Complete which drew Blue's full power, like Goku can fighting Fused Zamasu head on and nearly killed him but failed due Zamasu's immorality...

The "wouldn't get much of an improvement through training " probably refers to their current limits. Goku broke his limits and touched his deep potentials in order to use Ultra Instinct, so what Vegeta said may not be true anymore.
IIRC saiyans do not get stronger in the middle of battles, they get stronger after recovering from wounds. The Ultra Instinct allows Goku to adapt and evolve constantly during the fight. But I don't see how he can defeat Jiren, unless he can pull off something like Ultra Instinct Blue.

Yeah, I am always want to see Super Blue Oozaru X KK20 but too bad the author seems hate Great Ape transformation.

@Ruki: It'd be great if Goku and Vegeta manage to complete it in the anime as well, at some point.

But was it also revealed in the anime that the God ki in Super Saiyan Blue leaks out? Maybe during the Zamasu arc? If so, then it's really not a manga-only thing, huh? But in that case, I really do think Goku and Vegeta need to start holding their God ki within their bodies in Super Saiyan Blue form so that they can keep the ki from leaking and complete the form.

But Super Saiyan Blue Complete is very dangerous... They have few weakness... While Goku can use full power of blue's...it requires concentration and perfect qi control...once he let his guard down, he died... Ah, by the way he can use hakai (GoD's signature moves )
