Hmm...
Well first I thought of Ranma. Ranma is seriously underpowered, but is tricky and resourceful, and Ranma doesn't give up. So Ranma would of course lose at first, but once he discovered the all of Goku's training techniques Ranma would power up very quickly... probably still not enough to beat Goku though. So we'll pass on Ranma. Then it hit me: Madoka Kaname. Madoka in her final form would totally waste Goku. More interesting question would be her Gretchen form against Goku. Homura might be able to win with her uber-haxor cheating- though I'd still give Goku the odds in that one.

Tenchi Muyo as already mentioned. Power there makes DBZ look like a germ in comparison....casual multiverse buster/creator gods.
Madoka has been mentioned too. Top o Nerae! Gunbuster. Epic sci fi series. Destruction levels there get pretty high. Shana has god-level characters who, at their highest, are capable of world-creation/destruction at the very least Higher level Haruhi characters would beat him too... Dual! Parallel Trouble Adventure would prove a good fight too. There's far more if you go beyond anime... Game wise there is Kajiri Kamui Kagura and Dies Irae. Higher end characters from that series are casual multiverse busters and rewrite the laws of creation on a whim. Same for Demonbane. Disgaea and its sister series characters are far superior to DBZ. Morrigan, Dimitri, Pyron, and plenty other Darkstalkers characters are higher than him. Novel wise, the temporal mages from Circlet Girl may stand a chance. The Steel Earth series by Kinoko Nasu would be around on par with him if it weren't for DBZ's superior speed Fiamma of the Right from To Aru Majutsu Index would be capable of beating DBZ with the right conditions. He's not the strongest in his series. There's far more but at the moment these are the ones that immediately come to mind.

Shin Getter Robo (Getter Robo Armageddon) can destroy a planets and Genesic GaoGaiGar (GaoGaiGar Final) can destroy a sun. Buster Machine 7 from Diebuster (the show that was a prototype for TTGL) is quite formidable as well. Probably a bunch of stuff out there that are in one way or the other ridiculously powerful.

People who have mentioned someone other than gurren lagann need to remember this little fact - Goku can blow up entire planets - What's the point in mentioning characters that need a planet to fight on, Goku will just blow the planet itself Hey, don' t get me wrong I ain't a dragonball fan but I find this argument obsolete given what he's capable of.

(Can't believe I'm answering your second point)How about this - Goku does an attack to blow up the planet, while being there, then before the attack hits teleports to another planet, simple
