I use "Ho-Kago", because it's written that way on official materials, but the other spellings wouldn't technically be incorrect. It's a stylisation, like another Japanese girl band, SCANDAL, whose name is always written in capital letters.

The thing to remember with Japanese use of romaji is that they don't really *have* a standard spelling for anything with it. Frequently, the choices are made because of when they learned their romaji or just because of the *way it looks*. The shape of the Alphabet can be considered exotic.
It is like the Pirate Code: "Its really more a set of guidelines, you know"

More seriously... someone *did* post photos for a number of the reference locations in Japan used in K-On's anime background artwork. This is *very* common in a lot of "daily life" anime. Someone may beat me to it, but will try to find them later this weekend.
