I'm looking for mature anime. Here are some elements I like:

You should probably get into what kind of anime I am. I hope there are some titles I didnt already watch.

Have you not seen Neon Genesis Evangelion? It's right up your alley. I also recommend Shadow Star Narutaru which is from the creator of Bokurano, though stick with the manga since the anime went unfinished. Besides that, you definitely have to check out Baccano. Red Garden, Texhnolyze, and The SoulTaker will be greats if you want the mindfuck element turned up to 11.

Hellsing for violence and gore. Check out the OVA series, there's seven out so far, and they're such high-quality episodes that there's only one release every year. The manga's epicness, too.

Murder Princess *might* be in your category. Its only I think 6 OVAs but has good story line and action. Since its an OVA the violence is on heavier side iirc. The last 3 requirements are not really there but if your order is based on what you want to see most then I would say you should at least give episode 1 a shot.
