cabbage? Really? That makes no culinary sense! All I can see is a watery mess with lost of cheese ontop. I'm confused, I can understand broccoli/cauliflower because they don't tend to sore copious amounts of liquids after being cooked, but cabbage?

The problem with tofu imitations is that it doesn't have the fat or the texture of real meat, which means to enhance the flavor you have to season heavily or add a lot of oil, although dried tofu is pretty good for stirfry, just an little bit of meat enhances the flavor nearly 10 fold because it gives the tofu a meaty flavor.
But then again tofu is amazing, if you have silken all you need is hotsauce, chives, spring onion, soysauce and maybe a little roasted seasme oil and you have something amazing. The one unique thing meat has on the other hand is texture, meat flavors, and of course fat. I mean who doesn't like pork belly, chicken skin, bacon, marbled steaks. |

I don't know if I could ever make that mistake. Fish texture is actually really hard to imitate. So as long as there are fish/animals, i'll continue meat, but of course why limit oneself to the bounty of the earth. Unless it is restricted by your religion I don't find any reason to be so stingy about food.
