Well Kubo has not made anyone canon yet, but I would say either Urahara x Yoruichi or Ichigo x Rukia. But since Ichigo x Rukia are the main characters, Kubo may make them canon in the end.

Most canon?

I'm going to point out something obscure, but we only know of three *married* sets of characters--these should be the most canon because they've been carried to their logical end.

These three are
Ichigo's mom (deceased) xIsshin

KaienxRandom 3rd officer chick (both deceased)

ByakuyaxHisana (deceased)

So, these are the most canon pairings, period, but at the same time all involve dead people.

If I had to put a bet on the one with living, people, I'd go with IchigoxRukia.

Looking at this list, we'll just have to hope that Ichigo never hooks up with either Rukia or Orihime, because that will be the last thing they ever do before getting consumed by a hollow, contracting a disease that can even kill a soul, or some other hideous fate.

Most canon hard to say.

I don't consider UraYoru that canon.Yes they left soul society at the same time but until we know the true reason (which may be revealed soon) you can't say it's simply a fairy tale story of being whisked away.After all it's a shonen manga.

Shunsui/Nanao does seem to be quite canon if she were really that offended by Shunsui she could have left that division long ago.

It could be considered a teensy bit offensive that all the couples included are hetero.

Note : The only time Byakuya is seen smiling, is around Renji in ep 17

I'm not sure if I've seen those. I do know that they see each other as equals, hold one another in very high respect, and when they stand close to one another you definitely feel the tension.
