I think Peacemaker has nice sword fighting scene, really "beautiful", but I don't remember if there are lots of them. There is also Samurai Champloo that is nice too for fight, even if I didn't like the story that much, I still think its worth to watch. I watched Sword of the Stranger recently and its nice for sword fight.
You could try Ikki Tousen, I think it got martial art but I don't remember if its good and if the fights are great.

The martial arts fight scene animations are very fluid and extremely well done. I'm surprised no one's even mentioned it yet. The fight scene involving Balsa's caretaker is very impressive... |

I would have suggested Seirei, but I'm not sure it has enough action to satisfy the OP. As you say the action sequences are quite well-animated, but there aren't many of them. That made the show more worthwhile for me, since I don't really care all lthat much about "action" (otherwise known to the rest of the world as "violence").
Since I'm writing in this thread, I'll mention Noein which also has some remarkable fighting animations.
