1) If you're creating a new image, click Advanced Options in the "Create a New Image" dialog and pick "Fill With Transparency." If you're modifying an existing image, you need to add an "alpha channel" by choosing Tools > Transparency > Add Alpha Channel. After you add an alpha channel, try using the eraser tool to remove some of the image. You'll see the transparency "checkerboard" appear in the erased area.

2) Pick the rectangular selection tool from the toolbox (the upper left-most item). Hold down the mouse button and draw a box around the area you wish to preserve after cropping. (If you hold down a Shift key, the box will be square; otherwise it's rectangular.) Choose Image > Crop Image. I don't know what the other cropping options (Zealous Crop; Autocrop) do; I've never used them.

Adding to it, there's also a tool that looks like a knife where you can crop with as well.

Honestly, for cropping images I just take them into paint, then crop, then copy-paste it back into GIMP.
GIMP is so horrible for cropping, IMO....<_<

GIMP 2.4 has just been released, by the way, so perhaps things have improved. I wouldn't know since I'm no graphic designer at all
