Series I would like to see continued:

The Twelve Kingdoms - So many story threads are left unresolved by the end that the series all but begs to be continued. However, with no new novels in the series for some time who's to say if it could ever happen.
Berserk - Wins the award for the worst way to end a series in the history of anime. There's plenty of manga content available now despite its spotty release schedule, they could get a few seasons' worth made. Will likely never happen though.
Rurouni Kenshin - I've said it before and I will say it again: I want the goddamn Jinchuu Arc animated! YAR! RAGE!
Clannad - If only for a proper treatment for the Fujibayashi Sisters arc. A more in-depth treatment to Tomoyo's arc would be very welcome as well.

I have said it somewhere here before i think. But i will say it again.

HSD Kenichi. There is the content there to animate, the first series was amazing. Unless i have missed something quite major, i see little reason why a second series couldnt be made.

EDIT:

Another season of kannagi aswell. Felt the anime finished incompleted.

I'd love more Kino no Tabi, which is one of my favorite series. The TV series is beautiful, but sinfully short - there's a lot more material to be adapted from light novels, which are still continuing. At the same time, I felt that the movies (which aren't even full-length, they're about the same length as an episode) didn't do the series justice. While the first movie was a somewhat interesting, if not very informative or exciting, backstory on Kino's youth, the second movie was borderline mediocre. Kino didn't seem very interesting, and the story was very predictable, generic, and even very similar to the plot in one of the episodes in the TV series. The animation left a lot to be desired as well, and I didn't appreciate the fanservice, either. I want to see a proper continuation of the series, especially after how the second movie left a bitter aftertaste.

I would also like to see more of Toradora!, but in this case, I only want about one more episode. I felt the ending was kinda rushed, and I would love to see a post-series bonus episode that focuses on how all of the characters are doing in their lives as well as more of the bond between Ryuuji and Taiga.

I just finished Tenchimuyo GXP marathon for the nn th time and have not grown tired of the slaps stick comedy they present.
The VAs are great, the plot is great, the interaction between characters are great, and most of all delivery of script is perfect ! !
Best comic anime for a long time.
