For such place, with cheap food and fast service, your brigade would be mostly some low-pay cooks, some dishwashers and some exprimented cooks depending of the menus ( don't put a trainee behind the grill... ). Depending of the side of the place ( and of the brigade) the chef might also take the place of one experimented cook.
