I'll never understand the 'it's too cartoon for me' statement, regarding One Piece, though that isn't the time for that.
Air Gear is a title where the main character starts of as a rookie. There's also Katekyo Hitman Reborn! which is pretty similar.

D.Gray-Man is a shounen anime/manga that has roughly 100 episodes, but the story in the anime is incomplete--the manga continues on. The main character has a power that only a few people in the world possess, and he definitely fits the going from weak->strong model you're looking for. Its a really good show though, I enjoyed it.
This probably isn't the place to bring it up, but I thought about One Piece in a similar way you did until I sat down and gave it a few episodes to acquaint myself with the style. After you get used to it, its sort of like getting used to the CLAMP drawing style. The way I finally succumbed to watching it was the thought process: "this manga/anime has been going on for over a decade; if the story wasn't interesting and characters weren't great no one would watch it/keep it going for that long". Its one of the most popular anime/manga series ever. The Law of Ueki is another really great shounen title about a boy who can turn trash into trees. This sounds really, really lame but its actually quite awesome and is really well done. The comedy is top notch, and its totally original. Also the main lead has a really good personality IMO. |

I think Fullmetal Alchemist and already mentioned Hunter X Hunter are the standard recommendation if you liked Naruto and Bleach.
Caymore fits your description perfectly (main charachter starts weak and becomes strong and has a secret power), but it's nothing like Bleach or Naruto - it's depressing, gory and the charachters are almost exclusively badass female adults. |

Seconding Air Gear. That most definitely fits your description.
Suggesting; Busou Renkin - Again in this, the lead starts off as a rookie. Ichiban no Ushiro Daimao - Same yet again, however has a magical genre to it. |

This. However, there are a lot of filler episodes in D. Gray-man that may or may not put you to sleep in your chair. Still a good show though.
