What do you put in japanese curry without carbs?

I'm thinking of a japanese curry something paleo like, I been trying to cut out the rice/bread/noodles and potatos.

I'm wondering what is great in curry?
I'm putting in chicken and carrots but I don't know what vegetables to put in it that will satisfy me.

I was thinking brocoli/tomatos but I don't know if it will taste well with this curry flavor.

Onions, broccoli, corn, drained firm tofu, peas, corn. Add in some red pepper, paprika, or pepper paste for extra taste.

hmm thanks I am also skipping corn part of my diet too I have forgotten the exsistance of tofu though !
