Original Boba Fett was a Journeyman Protector Jaster Mereel from a planet called Concord Dawn... he killed a man unjustly and was exiled and stripped of his rank, so he became a bounty hunter.

So yeah. They ignore Expanded Universe, pretend it doesn't even exist, despite giving it canon status.

Funny thing is, most of that backstory has been given to Jango in some form or another, or given to Boba Fett after he grew up after the Clone Wars (he's like 13 or so at the end...he still has tme to be a Journeyman Protector in the 18 or so years between films).

The order changed, as did the details...the the meat was still there.

Than it wouldn't be owned by Disney.

Best guess currently is the story takes place twenty of so years after Return of the Jedi. But it could be moved up to thirty or even forty years if they want Mark Hamil to make an appearance as Luke Skywalker.
