She said in one of the previous episodes that to transform she needs to either be given some blood or to eat some wheat from Parsloe and wheat is limited to a porch on her neck. So she could transform but it would use a wheat which is very limited.
And "disappearing" was just to troll Lawrence. It is their general dynamic.

Instead teaching about economy, the show is teaching about risk of investment. Lawrence loses big time by getting into currency investing. He got injured and put Holo in danger. To save the day, Holo has to turn into Dark Soul boss mode. Holo's transformation in the old anime looks like a fox. Holo's transformation in the new anime looks like a shiba inu. Perhaps, Holo is trolling speculators by transforming to the Dogecoin icon.
Lawrence's invovlement in currency investing looks like monetary gain on surface. He gets unwanted attention from nobles and church. His gain cannot compensate the risk he is getting. Spice and Wolf is not the only story about currency investing. One manga talks about fictitious investing loses by girls. Unlike other countries' investors, Japanese investors put a lot of attention on exchange rates. The girls in the manga suffer a lot from their investment decision.
