There are some that reincarnation stories that had a little relevance to the MC: to of the ones I've read being:

though it was mainly only in the beginning, where he tried to train and make his life meaningful, it got derailed, though there were still parts used to mature his character)

Spoiler for Gun-Ota:

Where he abandoned his friend when he was being bullied, leading to his friends suicide. And now that is is reincarnated, he swears to help people, and not run away. Though I've only read the translated chapters (15 so far), so I don't know if it gets derailed later like Mushoku.

Anyways, I think the main reason is:
1. Like laon said, it's easier for us to immerse in the story, thus we get more enjoyment out of it.
2. It's real hard to create a 'life' out of just your imagination, especially one where people can relate to, and thus more likely to read.

IMHO, Fantasy stories are pretty much things you'd do if you were to encounter such things, and can be easily made up, but trying to keep it interesting is much harder, and that's why most tend to get derailed.

3. It's real hard to keep someone interested in read about someone else's bibliography. (I for one think most of them are dumb and annoying :P)

Also, you're kinda missing the point on the whole reincarnation thing, kinda. The whole point, to me, is life experience, mature/genius kids don't have as much life experience as someone that is reincarnated, but yeah, it could work, in some ways, but not as likely as being reincarnated.

IDK the genre is still fresh for me considering that the English reading fandom just encountered this translation explosion with Re:Monster this year.

Some might have gotten tired of it, but probably due to the fact that we've read most of the available ones recently.

Its like with SAO, (even though .Hack notwithstanding) a lot of people think the VRMMO genre is overdone, but it's only been what? Like 2 years since it became mainstream?

It's another fun story along the genre, but the best comparison is that metal slime one which is filled with absurd events.

The MC in this reminds me of the MC in 奪う者　奪われる者 , but at least the MC in that one had the excuse of being reincarnated at like 11-12, the MC in this one acts the same age but is like 30-40~ or something. There were a lot of discrepancies along those lines.

This is one example of having a lot of flaws doesn't particularly make it a bad read, though if those kinds of things bother you, you probably won't like this one.

my problem has less to do with reusing the same trope over and over again. More that most of these story are big on wish fulfillment. Seems only a few are serious about writing (ex, Knight and Magic, Mushoku Tensei, Sayonara Ryuusei). The lvl of writing between the serious Writers and the Wish fulfillment writers are absolutely huge.

Let me add more to the bolded words above:

This is one of a title which starts good but midway went downhill and make me scream "give me back my expectation!". I actually like the way author expresses characters emotion (the same with his several other titles), and the idea of spirit magic in this story is cool, Protag companion is cute with her tsukkomi, as well as the idea of genderbender werewolf. But all of it are wasted... too much irrelevant stuff that butchers the pace and the plot, just for the sake of forced comedy. and then there are several sudden gloomy "twist" that happened and buried by the new twist just because it's unfavorable to readers.

Hagure Metal is better: because it tells you straight on the introduction that it's absurd comedy. The similar thing about Bocchi and Hagure Slime that I agree is: switch your brain into comedy and don't expect real stuff.

I would rather compare this to: Shinka no Mi or Makikomareta Daitai Cheat :\
