Well, there's always Hellsing (especially the OVA, Hellsing Ultimate) and Elfen Lied.

Try Mnemosyne no Musume-tachi for some action-packed gore and lesbianism if you're into that sort of stuff.

I second Elfen Lied and Hellsing. However Elfen Lied doesn't really have great action scenes, it's more focused on the characters and their tragic situation.
Hellsing on the other hand has some very good scenes and cool characters.

then there's two classic movies:

"Akira" and "Blood, the last vampire"

Fairly old Anime movie but Ninja scroll is pretty gory and has great action scenes, was also a decent 13 episode series but i prefer the movie.

Without a doubt, Berserk is right up there in this category. Not to mention it's got one of the worst endings ever put to a series. It's ridiculously brutal but still a good watch.

Somehow I got used to the gore in the Berserk manga after a while (didn't watch the anime), also because Berserk went the 'Inuyasha way' after a while...

I really second Baccano!, Kara no Kyoukai, and Mnemosyne. These are a must for gore genre seekers
