Looking for a anime that has a character or characters change throughout a story
preferably comedy/action but anything other than that is ok

Try Canvas 2 one of the main heroine goes through a huge change in her character and attitude.

Junni Kokki -
The heroine's character grows more than in any other anime I've seen and does so in admirable fashion.

Hikaru no Go -
The boys mature physically and emotionally right before our eyes as they grow from 10 to 14.

Junni Kokki (12 Kingdoms) is THE best show for this, imho.

Another really good one is Haibane-Renmei.
