I found out about this quite a while ago since I follow the illustrator (at least a month before the manga started), but never got around to actually checking it out. So how good is this actually and who does she get together with?

Her family is damn annoying.

It sort of turned into a slice-of-life story after awhile didn't it? It skips over some of the stuff I am interested in finding out. It said she was going to read about the strange abilities of the other countries military and then the story moves on to something else.

So it looks like the manga is practically rewriting the entire story. Because the manga has the masked guy who knows MC's past life showing up already, but in the LN he doesn't show up until vol 5.

So the manga for this just ended and...the entire manga was a full blown rewrite with so many things done completely differently from the novel. Also the final battle and ending were somewhat reminiscent of Tsubasa Reservoir Chronicles with MC and and her husband both fighting alongside their current life selves as separate people and everything ending on a relatively happy note but their lives still go on as they clean things up.

The final arc also seemed a bit rushed, especially with the final boss being taken out in only a single chapter and seemingly going down way too easily considering how pompous they were acting.

I will note, overall I think I prefer how the manga did things even if it was a bit generic at some points, but that's largely because the novel is very...monotone with the MC not really having much of a character, coming off as rather stoic other than her magic research mania in the novel. In the manga, she actually gets emotional at times which is much more natural considering her backstory and there's some proper conflict and resolution in her relationship with her sister unlike how in the novel where it was a typical zamaa~ type conclusion.

Given the LNs are still listed as ongoing (Vol 8 came out in Oct 2022), can I assume the manga is its own independent adaptation doing its own thing?
Like the 1st Fullmetal Alchemist anime which had its own original plot and ending in its 2nd half?

Yes, like I said, it went and rewrote almost everything. Basically only the very base settings of most of the chars are still intact, and it's essentially a different story.
