I wouldn't say Jack is just a Chimney Sweep. A jack is often a very skilled craftsman, such as a Steeplejack, someone who builds or maintains very tall structures (in the classic sense, this would mostly mean churches and other such structures).

Peasant... maybe, but if you were a steeplejack you'd be a fairly high standing peasent (lol, pun not intended, honestly).

R = soft rolling sound using the tongue rather than the hard 'arr' sound we use in English

So it would be pronounced pretty much like Ilya in Fate/ Stay Night?

Not really. I thought about it but Ilya has a clear /i/ there, not a "y" from yeah sound. That j probably sounds like the German j in "ja".
