You may want to check on Hokuten no Ken.

Those guys spurt out blood, guts and then continue to have their heads blown apart while the body disintergrates. Every episode or any episode where Ken displays his fist faster than your eyes can see.

Elfen Lied: Very "bloody" anime to watch. Even at the start you see heads flying, lolz.

And you might want to watch Soten No ken, which is before he Hokuto No Ken Series.
