From what I recall, it didn't change until week 4, and NR is week 3.

I don't know a lot of Extella/Zero but I think only round 7 and the rounds unique to either route have changed (so both Berserker and Lancer rounds).

So even though Extra is my favorite of the Fate series, I haven't kept up with news for the anime. Has there been any news on how long the anime will be?

I'm guessing it's single cour? The story isn't really all that long. I mean they might need to compress it a little but double cour seems too long.
