Basically Mikasa is not a cold machine, but she can think and act rationally in most situations.

We have seen that she can occasionally lose her composure and act emotionally in particularly stressing situations (i.e. when she tries to save Carla).
She is human after all.

Eren can be cool headed (and surprisingly charismatic) when he wants. It's not a leap in character. Mikasa being the emotional one once again for change is also great, this helps round out both her and Eren's characters.

So I guess it turns out Mikasa is Japanese and the assumed last of them which really doesn't come as a surprise to me given her name and overall appearance.

She is half-oriental.

The author really made sure to avoid to mention terms such as "Asia" and "Japan".

It is perhaps relevant to point out that "Mikasa" is written in katakana just like every other name.

Mikasa was the only one who can slaughter two titans in a row so far. During first episode a bunch of people in the scouting legion died just trying to kill one titan. Somehow Mikasa is a wonder-women.

Well, she did have much of her mental limiters released after that whole ordeal in her past, so she being stronger than most people isn't too surprising.

And to be fair Mikasa was in Rear Guard, surrounded by elites and away from most of action in the frontlines. Most Titans heading her way would be funneled and few in numbers so it wouldn't be hard for her to handle.

In fact the very first titan that Mikasa killed was a deviant who could run extremely fast. Even the other elites couldn't match with him.

Eren and his squad were also very unlucky for the same reason, most likely.
I think we can assume that the first line of defense didn't fall without a fight. They must have killed all the weak ones until the strongest titans remained grouped and made short work of them.

Eren's squad ended up fighting against one of those strong groups that even the veterans couldn't kill. Except for the bearded one which was probably a late arrival

"Veteran" and "elite" being relative. They're the wall garrison. Not motivated enough for the scouts, not good enough for the military police.

No, she was just taken in by Eren's family, I don't even think she was formally adopted.
