Continuous Plot
So I just finished Stien;Gate (which was incredible, I must say) and I began to think...
Most of the series I enjoy are stories with continuous plots. Ones that don't start to trail off into some side-story. No fillers. No beach visits. No camping trips where some monster appears. Can someone recommend a series with a straight, linear, focused plot?

There are lots of shows with fairly linear plots; most of them are dramas. I'd put Monster (74 episodes) at the top of that list, followed by Seirei no Moribito (26). Hikaru no Go is a very compelling show as well; it's the same length as Monster. Other good choices include Puella Magi Madoka Magica, Ghost Hound, Claymore, Kemono no Souja-Erin, Noein (streamed with dubs), Tokyo Magnitude 8.0, Nodame Cantabile, and Cross Game.
Some shows have multiple story threads that work in parallel toward a common conclusion. Baccano! and Twelve Kingdoms are good examples.
