Hellsing Ultimate(Hellsing 2006), Ovas that are made much more like the manga than the old Hellsing series. This stuff is really great, lots of violence and they dont cut down on it at all. Characters are really well made so I dont think you will dislike this.
There are just 2 eps out now but they are like 50min long each and also the next one is coming in february. I second and third all the other posts and I'd like to add Berserk. The anime is very good up until last episode that just leaves you hanging, forcing you to read the manga which is on the other hand Awesome.

You could also try watching Fate/Stay Night while your at it. It's not as violent as Hellsing or Elfen Leid but it has plenty of action and a good storyline too. Plus, it has a little darker mood around it.
