To put into terms about where the story currently is: the anime will be at chapter 129 of the web novel when the second season starts, whereas the the most recent chapter of that is chapter 364.

Not really, when you consider that when it came to another show by the same studio, Non Non Biyori, there was a two-year period between the announcement of a third season and the season actually airing.

That's why while most of the time, when a Series is adapted for the first time, they don't really care about the plot coverage gap between the Anime and the Manga, since its for promotion purpose (there is never a gap like that in the case of the LN, so there is no worry there). But once subsequent Season for a Series gets green signal, they try to either delay the release of the Anime or release more chapters so that the Manga adaptation is able to either catch-up or surpass the plot covered by the Anime, in order to avoid affecting the sales of Manga Volumes. For example, during when "Tensei Slime Season 1" was airing, the Manga at one point was slightly behind the Anime plot covered. But in order to avoid the Anime to surpass the plot coverage, they released 2 chapters back-to-back for a few months, so that the Manga adaptation match the point of ending of Season 1 (this was done after midway in the series, after the green signal for Season 2 giving to the team).

Bofuri on the other hand is the usual case where the manga and anime are both just separate adaptations of the LN, though I guess the anime committee probably has its own share of representatives for the manga too to ensure that manga sales are being considered as well, but they are probably not the ones with the greatest say in the anime committee.

Personally, I feel the delay of Bofuri to next year is more to do with the studio being busy with other products (i.e. another season of Non Non Biyori) and COVID causing some slowdown when it comes to production.
