I've always been a fan of the hard rock / metal tracks of Guilty Gear and Blazblue. Notable mentions from my end would be Still in the Dark (Guilty Gear), Nightmare Fiction (Blazblue), Imperial Code (Blazblue) and Blood Pain (Blazblue).
The Final Fantasy and Metal Gear series are of course no strangers to some epic tracks too =)

Without doubt: Super Smash Bros. Brawl. It gave new life to a truckload of epic game tracks, including old Zelda and Mario tracks from Nintendo 64, and even older ones too...
And if couldn't say Brawl boasts Nintendos best soundtrack, then I'd pick Super Smash Bros. Melee instead. Smash Bros FTW!

HF2! I loved that game! I literally had an all-night HF2 spree play-through one day with my friends. We only stopped for bathrooms and dinner. Nothing else.
I still greatly enjoy the first few soundtracks of Sonics 3D games. Such rockin' tunes for a seemingly childish game.

Forgot to mention it earlier, but Bayonetta has a pretty awesome soundtrack. All of the music complements the gameplay and tone of the game very well. I especially like the use of piano and choir throughout the soundtrack especially during the game's epic scale boss battles.
