So it's like McDonald's french fries. One bite, and you'll instantly know it was McDonald's. Souma did not have that sense in his dish, that distinguishes it to be his and his style alone, which people will instantly recognize when they take a bite.
In a way, Megumi is ahead of Souma in this regards. When people eat Megumi's food, I'm pretty sure they know that it is her style and that it is unique.

It's funny looking back at what Soma has done. He made the judges young again, made them dance on the greener side of a hill, took them out to an amusement park, etc. While exhilarating, none of that made the judges say hm, this is a dish by Soma, instead it was always "this is interesting!"
