Since they took out Imageready, how do you make ani. gifs in CS3?

Right at the top of this forum is this sticky listing HOWTOs. The first two items in the list concern how to make animated gifs. While some of the tutorials discuss Photoshop, others discuss alternative, usually free tools like the GIMP.
