For sci-fi perhaps you'd like Crest/Banner of the Stars and Stellvia of the Universe. Both are space themed anime with romance etc.
For fantasy, perhaps Orphen? I'll second Spice and Wolf as it's one of the greatest anime ever ![]() |

I say watch the GITS movies. You watched both seasons of S.A.C. and they are o.k., but the 95 Ghost in the Shell is a classic. The Matrix borrowed a lot of concepts and took some of the action sequences for itself. Just that fact tells you it's a pretty good scifi. When one of the biggest scifi movie trologies borrows scenes from you, you know you did a good job. Plus the 95 GITS is kooler than the S.A.C. movies (by far). Its less mystery and more cerebral. It is totally 'meta'
I'm sorry, i just saw it again and was blown away. Not sure if you are lookin for movies but i'll give you a pretty obvious one: Akira for a short OVA Fantasy series that is a little more obscure that i still like a lot, i suggest 3x3 eyes I think the first 2 episodes were made in 94 and the last 4 were made in 2004 i think (may be 2000)
