It was stated in the beginning chapters of the manga by Ishiki that your seat number has nothing to do with ranking or their level of skills.

I thought it was pretty clear that it shows she has a fleeting desire of friends, peers and rivals who she could compete with and laugh together with like Souma, Ryo, and Hayama, then replaced that in 3 seconds with thought along the line of "it's not necessary for me."

Yeah, I think so too. Erina would like to have rivals, but her whole life she was unrivaled. That's the price of being the best - you have no peers. Deep down she must feel pretty lonely.

You are wrong. This was never stated. I think the opposite was also never stated, however we have a lot of reasons to believe so. For example when Souma says even his father never saw the top or how only the pictures of former first seats are hung in the stadium and so on. So yes, the ranking does represent your rank or at least seat 1 does show you the best cook of the entire school.
