if umami is universally accepted as real and basic common taste, why isnt that word taught at school during like, basic biology? or is it?
wait, umami IS msg? im not food expert but since i was little, people always tell me it's bad for you health

Umami is trying to describe the taste or savoriness that can be produced much in the same way that Monosodium Glutamate (MSG) enhances aroma and savoriness in foods. MSG is also naturally occurring in many types of foods, such as tomatoes and cheese. As far as being bad for you, it is like salt or sugar: if you have too much of it, of course it will create health concerns. However, realize that MSG is naturally occurring in a lot of foods we commonly eat, although not at the levels that certain restaurants and chefs throw in their dishes. Personally, if I eat a dish with too much MSG, it creates dehydration and other issues at the base of my skull. As for the episode, it looks like Souma pickled his Pacific Saury. I can't really imagine how that would taste, but pickling meat has not tasted that good for me personally (the squid in kimchi pickling process). I hope the match will end and be judged by the next episode. P.S. Leonora will probably approve of Souma marrying her daughter next episode after she tastes his dish.

So Soma is at a big disadvantages here as his two opponents can flawlessly pick the best fish of the day – Hayama can smell the fish out and Ryo can simply touch the fish and tell almost everything about it. Soma has two options, either polish his fish picking skills or come up with a way to counter their perfect fish. Ryo defeats him in that little showdown at the fish market which tells him how outmatched he is in picking fish. His aging techniques made the fish better but not better than Ryo. Soma has defeated better ingredients before as he defeated Nikumi's near perfect meat with store bought meat. He's doing something similar here as he's not going for the pick of the day for the finals. And him not being there to pick up fish for the finals isn't that good a sign since both know that Soma hasn't given up and has a trick up his sleeve. They think that Soma's recipe could be good enough without the best fish out there. Lol Hayama and Ryo's picks were straight like swords and then we had Soma's fish. And Alice's foreigner mother shows up to judge the finals along with old man Nakiri and Dojima. Lol when she started to speak. Totally ruined all that elegance flowing from her. This was interesting. They didn't give the practice part a whole episode which made things feel a bit too fast. Now Soma will be fighting against two dangerous monsters. But he's nothing less than a monster himself so he's well-matched. |

There have been other things prepped before, such as spices. Also, the competition doesn't seem to have a time limit. I guess all that matters is the final product, however it can be made. If they made everything ahead and served it cold, then that probably will be ok, too, if cold or stale food can win it.

I just watched episode 7. All I can say is that with what happened with Kurokiba and the judges, I couldn't help but picturing him in Hell's Kitchen.

Now that is a pretty self-centered comment. Have you seen every English word on the dictionary being used? I bet you haven't. That doesn't mean those "unknown" words (to you) are dumb. English just doesn't have the right word to represent "umami", so English borrowed the word for lack of vocab. I suggest you learn to be more open-minded a bit when it comes to accepting new things.

About umami being a thing: yes, it is. Of course, the anime takes an unrealistic approach in order to highlight the impact of various dishes, without giving much thought to how much it would actually affect the overall taste. It's the same deal with fat, especially when it comes to fish...ew.
About prepping materials in competitive cooking: aren't they just doing what they'd done back in training camp? They have to secure their own ingredients, simple as that. Now, while an ungodly cook could make people say shit tastes good (looking at you, Komatsu), pros should have a good understanding of the difference between average and quality ingredients. |
