Because it's now second nature for anyone who reads this series to expect delays with each new volume.
Y'know it's bad when we've been conditioned to expect delays instead of on-schedule releases and it has pretty much become a meme for readers at this point...

I just wonder what’re they gonna base season 3 on? I thought season 2 caught up with the latest volume. I can’t imagine them creating an either season just from the last 2 books.
I thought they should do like ova or movie, rather than a full season.

Most of the time when this happens the studios either get the information from the author on how to end the series making it the same ending from the LN or they can choose a different direction. In this case there is only 1 volume left and despite the delays season 3 is probably going to adapt everything until this last volume.

Honestly, might as well sack it at this point. Since it’s the last volume, the publisher or whoever probably being lenient. “It’s the last one, eh, let’s give it to him”
But if that’s the author’s style (delaying releases, years of gap between volumes), doubt he’ll do well in future projects. Actually, I won’t be shocked if he retires after this series. But that’s a different topic.

dang, i read it until vol 12. because i saw the manga was updated recently(i read it), and heard that season 3 was in production.
My feelings about it will be that they delayed it so much just to wait for W.W. to finish it so they could wrap it up nicely. hopefully like the last 2 volumes, vol.14 will be published in autumn this year. i am so sad and happy that almost 7-8 years later i am here to witness the conclusion. So many things happened in my life that were so similar, but i could not "save" my "Yukinon"; Yui is missing,and so on. I am happy to see it end, i hope it will be on a high note, not bittersweet, and through the years i have shifted from a full-out Yui fan to a "any girl will be good for him" fan.

Why can't everyone just see it - Saika is the true route of the entire series: He's about teh only guy 8man's got eyes for from the 1st Vol to the last.
I'd forgive WW if he delayed all this time just cos he can't make up his mind about coming out on Saika... |

Oh no. I read volume 13. Oh no. My god. It is sooo.. I dunno how to describe these feelings. It is almost like you don't need volume 14. And honestly the interludes felt more important than the main story.
