As expected she’s Tohka, but she’s a Tohka from a different timeline where some events were different, like actually going to Okinawa, them wearing different outfit for the manga contest against Nia. But Shido ended up dying in her timeline, she went berserk and killed all the Spirits in her timeline.

When Shido eventually learned of this he after kissing her, he went to stay in Beast-Tohka‘s timeline for 2 months eventually Kurumi appears before Tohka which she believes to be impossible since she already killed Kurumi. Eventually Kurumi asks Tohka if she wants to redo the world.

Apparently the ending where Shido meets Tohka again, is ambiguous on whether or not it’s main Shido’s or Beast-Tohka’s timeline

Is this meant to be sequel bait or something to be fully concluded in Encore 10? Because this makes no sense at all.

No, there is no sequel. There are bunch of goodbyes in the afterword. This was it for Date A Live's story.
The Afterword says Encore 10 will have the after-story, I believe.

Which means we might get some kind of answer there. Kind of wish the ending was made clearer in the main story, but I can't complain too much when it was clear that Encore 10 would be released after this.

Does anyone know what happened in the new DAB volume? I keep hearing something about Sawa being mentioned.

Either Hibiki is Sawa, or is brainwashed by Queen into thinking she is. It's left intentionally unclear.

I know this will cause controversy, but I think I kinda like this open ending.

It doesn't tell us everything, but instead leaves enough dots to make our own conclusion.
Also, avoids fan backlash since we don't know who Shido ended up with in the end.

Looks like Natsumi's backstory is interestingly an almost complete opposite of Yoshino's

Whereas Yoshino had a loving mother who died from overwork to afford her daughter's living, Natsumi grew up under a neglective and abusive mother who let her starve, forcing her to survive off school lunches.
Also, still theorize that she got bullied as well considering her highly detailed fantasies about it.

The will of the world itself, implied to be Reine, brought Beast/Tohka-Y to X in order to use her as a template to recreate Tohka-X
The last scene is Shido-X meeting the recreated Tohka-X, with them both thinking/saying they're each other's 'most important person'.

It looks like there may not be one. It looks like it was the translator theorizing rather than confirming.
We know Encore 10 is next, and that this was the last DAL novel, but it doesn't look like there definitely will be an afterstory in Encore 10.

Who knows at this point. Speaking from a logical view, the chance that there will be one is rather good than bad. Encore 10 has to have some stories, which take place after the current events, otherwise that would be weird, if you ask me.

I was expecting this to go true harem, but man what a disappointment

"Disappointment" is an understatement. This is a clusterfuck of an ending, and its incredibly twisted to the point that I'm questioning whether the Shido we see in it is the true one. Compare Shido from pre-Tohka absorbing Mio Sephira with the one post, you'll find that Shido (who was willing to plunge into time-space fuckery for Origami) is a lot less willing to find a better solution in this one. Its as if he encountered some improbable, impossible situation that caused him to change his outlook significantly. This is not the Shidou that prompted me to read my first ever light novel, this is some Wescott clone.

The original Tohka and Mio are still dead, so he ends with an alt-universe Tohka.
