In one thread I've seen people comment that they'd seen a fair number of love triangles where the hub has a big crush on one person but ultimately ends up with the other, and is shown from early on to legitimately love that person even though they don't realize it. I was wondering if I could have some examples, since that's something I've been wanting to see for some time.

Toradora is the only one I can recommend in that category.
If you forego the first part and only focus on "is shown from early on to legitimately love that person even though they don't realize it", than I can also recommend Ookami to Koushinryou.

Spoiler: In the story, the heroine Tsukiko has a condition in which her body from time to time "metamorphoses", meaning large amounts of iron protrude from all over her body. After the hero, her childhood friend Haruki, discovers the secret, she enlists his help hiding her condition and examining the metamorphosis to gain insights. Very early on it's established that she has a big crush on her senpai, but gradually she shows more and more interest in her childhood friend. As for what makes it exceptionally explicit... Spoiler: It's eventually revealed that the phenomenon is caused by an odd reaction to a girl's first experience of love, and the girl's romantic feelings and experiences that impact those feelings have a big effect on the metamorphosis. Not long after Tsukiko enlisted Haruki's help and started spending more time with him a small part of her iron changed color, and over time more and more of the iron was this color, providing a very direct and explicit demonstration of her gradually falling more and more in love with Haruki over time.
